Pork Chops with Apples and Onions

This one pot pork chops, apples, and onions is amazing!!! This week we have tons of pork chops and apples at the pantry so I thought that I would share this delicious recipe with you all.

Ingredients

  • 2 Tablespoons olive oil
  • 3-4 ounce pork chops with or without bones
  • kosher salt and pepper to taste
  • 3/4 cup chicken stock
  • 1 teaspoon Dijon mustard or whole grain Dijon
  • 1 tablespoon fresh sage, chopped
  • 1/2 teaspoon fresh thyme, chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 medium apples thinly sliced
  • 1 small red onion thinly sliced

Instructions

Season both sides of pork chops with salt and pepper. Add 1 tablespoon of oil to a large heavy bottomed pan (I use a cast iron skillet) and heat over medium high heat. Add pork chops to pan leaving at least an inch between the chops to ensure even cooking and browning. Sear 3-5 minutes per side or until chops are mostly done. They will continue to cook in the sauce later.

Remove pork chops to a dish and set aside.

In a small mixing bowl, whisk together stock and mustard, then set aside.

Add remaining oil to the pan that you cooked the pork chops in. Then add onions and apples. Cook 4 minutes, stirring occasionally. Season with salt, pepper, sage, rosemary, and thyme. Stir to combine.

Pour in stock mixture, using a wooden spoon to gently scrape the bottom of the pan to release any brown bits. ( those brown bits are full of awesome flavor.

Slide pork chops back into the pan, nestling them down in between the apples.

Cook 2-3 minutes until pork is finished cooking and liquid has reduced by half.

Enjoy!!! It may seam like its a lot to do but I assure you that it is not. Its a quick and easy meal that should take no longer than 20-25 minutes to make. I love using the fresh herbs but if you don’t have the fresh ones that’s ok cause the dried ones work too! The pork chops turn out tender and juicy. The caramelized onions and apples pair perfectly with the pork.
